This Spanish Smoked Paprika is one of our all-time favourite spices.  Smoked paprika is made by drying sweet peppers over smoking oak wood for 15 days. The hot air and smoke, dry the peppers as well as imparting a wonderful smokey flavour. Once dried they are grind to a fine, rich red powder. Paprika is never as hot as chilli or cayenne – unlike those fiery spices, its main purpose is to add flavour and colour, more than heat.
